Matcha Chocolate Chip MuffinsIngredients:2 1/2 cups whole wheat pastry flour1 tsp baking soda1 tsp salt2 tbsp Siplicious Izu Matcha1/2 cardamom1 tsp ground ginger3/4 cup sugar (or 3/8 cup honey)1 cup apple sauce2 eggs, slightly beaten1 cup plain yogurt1/2 cup dark chocolate chipsInstructions:Preheat oven to 350°F. Sift together flour, baking soda, salt, matcha, ginger, and cardamom. In a large bowl, mix together eggs, sugar, and oil. Add flour mixture and yogurt to wet mixture 1/2 at a time and mix well. Add chocolate chips.Spoon into paper lined or greased muffin cups. Bake 18-20 minutes, or until a tester comes out clean. Watch closely and remove the muffins fromthe oven before they brown.
